If life has been hectic lately with all the holiday celebrations, why not relax one afternoon and cozy up with a mug of Peppermint Hot Chocolate? Peppermint is refreshing and stimulating to the nervous system, so it’s a great pick-me-up. It also encourages healthy digestion; and if you've been over-indulging, it's a carminative, so it can help with gas and bloating.
Ingredients
2 tablespoons dried peppermint leaf
2 cups milk or milk alternative, such as almond milk, coconut milk, etc.
2-3 tablespoons of sweetener of your choice, such as maple syrup, raw sugar, or a pinch of stevia leaf
2 tablespoons organic cocoa powder
Optional: marshmallows, whipped cream, a dusting of cocoa powder, or a peppermint candy cane
Directions
Make an infusion with the peppermint leaf and milk by combining both in a saucepan. Bring it to a simmer over medium heat, and continuously stir it to prevent milk from burning.
Remove pan from heat, cover the pan, and steep for 10 minutes.
Strain peppermint leaf from milk and return infused milk to the saucepan.
Over medium heat, whisk in sweetener and cacao powder. You can use a stick immersion blender to get everything blended.
Serve hot and if you’d like, top with any of the optional toppings listed above.
