Gluten-free Crispy Chicken Tenders

For a quick meal, make these gluten-free chicken tenders. They're crispy on the outside but moist in the middle.
Gluten-free Crispy Chicken Tenders Recipe
Ingredients:
1/2 pound boneless chicken tenders, skinless (or cut a chicken breast into strips)
2 tablespoons Dijon mustard
2 tablespoons Olive oil
4 tablespoons Gluten-free Italian breadcrumbs
1 tablespoon Parmesan cheese
Directions:

Preheat oven to 375 degrees.
Line a baking sheet with parchment paper or tinfoil.
Combine olive oil and mustard in a bowl and set aside.
Combine gluten-free breadcrumbs and parmesan cheese in a separate bowl.
Clean and dry the chicken tenders.
Dip a chicken tender first in the olive oil/mustard bowl and coat; then dip the chicken tender into the breadcrumb/cheese bowl. Make sure the chicken tender is thoroughly coated.
Place coated chicken tender on the lined baking sheet.
Repeat the above steps with the remaining tenders.
Cook for 12-15 minutes, turning the tenders over half-way through. You could also put them under the broiler for the last few minutes.

Serve with Baked Sweet Potato Wedges and a salad or other vegetable. For children, they may like a dipping sauce such as Ranch dressing or a Honey Mustard dressing.
